The checkbox in the UI for allowing/blocking sites in policies overlaps text and prevents you from seeing your entry on longer strings, rather than repositioning the caret. (Current Edge, no add-ons, 100% zoom.)

With the introduction of the new tabular view, this is fixed and you should be able to edit and save a domain to the allow/block list in a better experience than what was shared by OP.

I don't think their site is optimized for mobile. This only appears to be a problem with mobile browsers.
